Our API docs installation instructions (doc/api-docs/installing.rst) are now notably different because we have a conda-forge package available. We should update this to describe conda/mamba and pip installation processes, including how to install from git for a development build.

The current docs aren't wrong, they're just not as concise as they could be when using the conda-forge package.
