chore(iota): Set active address when generating first new address #5173

Description

Sets the config active_address when generating a new address.

Also sets the active_env when a new config is created or when setting envs, if it was not already set.

Yeah, I forgot that one of the benefits of implementing the trait was that we could call generate_and_add_new_key and it would set the active address...
