docs: remove deprecated Builder compatibility guide from docs #54145

What

The Compatibility Guide is one of the top-level docs pages for the Connector Builder, but it is out-of-date and doesn't at all accurately reflect the current capabilities/limitations of the Builder. Rather than rewrite the whole document only for it to get outdated again, we are removing the page and any references to it. Where needed, we can simply redirect to the Builder tutorial, as we are keen to encourage as many users as possible to try the Builder for their use cases.

Resolves #11717

Can this PR be safely reverted and rolled back?
