feat: improve macos setup script compatibility with Sequoia

- improve documentation of existing settings - re-order groupings where useful - fix TextEdit plain text view - fix clock in menubar to display as intended - make FN key show Emoji picker - make F1-nm keys require FN for special functions - make screenshot settings explicit - disable default bottom right hot corner
