Prevent invalid headers from being written when not all devices recorded #227

Currently, some headers (in particular signed) get written as if all channels are being written, even when some detectors are disabled.

This causes odd issues like some channels being called "signed" when they shouldn't be (And vice versa)

See wright-group/WrightTools#912 for one such effect

Writing .data files is no more... though signedness is something still missing
